

The extreme variety of exposures and pedological characteristics suggested the subdivision into 39 small plots managed separately. The goal of agronomic management is simply to enhance every single expression of them. No fertilizers are used but the ancient technique of green manuring, according to which field beans, alfalfa and phacelia are sown between the rows of beans, which enrich the soil and protect it from erosion and crushing; nothing other than copper and sulfur is used for the treatments. The winery's task remains to preserve the expression of each individual vineyard right down to the bottle. Each wine, in fact, has always originated from the same parcels that have a precise name and identity that we try to discover and respect at each harvest.

It imposes itself on the sip for a range of complex and rare flavors ranging from ripe red fruits to spicy spices, from balsamiq to aromatic woods. The texture of the wine is silky but dense, with acidity and noble tannins well blended and capable of giving a harmonious finish with returns of red fruits and spices.
According to the tradition of the Alps, it goes well with feathered game (pigeon, quail, woodcock), hare, snails and recipes based on fish with red and fatty meat such as salmon, tuna, turbot, or with semi-soft, semi-hard or hard of medium aging.
